Thanks to tumblr I stumbled upon Laura Mess' food blog, it is a wonderful mix of nutrient rich ingredients and unique ideas. When I saw her Carrot cake pancakes with tangy lime cashew cream, I fell in love! It is vegan, nutrient rich and fraking amazing!
